Summer Wheat Wort Kit:
With
the onset of this warmer weather, we will be putting on our seasonal wheat
wort kit from now until the end of the year. The wheat is a classic style wheat
beer with a low bitterness hop mixture, golden yellow colour and
complex finished mouth feel. Because of its low bitterness, it makes for an
easy drinking, refreshing drink for all those long hot
summer days. Also, due to its high amount of wheat composition in the grain
bill, the Wheat wort kit will give off an extremely creamy, high foaming
finishing head. This high amount of wheat also results in a hazy, cloudy
appearance, typical to all traditional wheat beers. To really achieve the
true flavours and esters of a wheat beer, we recommend in using the White Labs
WLP300 Hefeweizen or WLP380 Hefeweizen IV liquid strains. To purchase the

WLP351 Bavarian Weizen
Yeast:
Former W51 yeast
strain, acquired by Dan McConnel. The original description still fits,
"a classic German style wheat strain, with moderately
high, phelonic overtones reminiscent of cloves. It also has the following
qualities:
Attenuation: 73-77%
Flocculation: Low
Optimum Fermentation Temperature: 18-20 degrees Celsius(65-68 degrees
Fahrenheit)
Alcohol Tolerance: Medium
WLP410 Belgian Wit II Ale Yeast:
Less phelonic that
WLP400, and more spicy. Will leave a bit more sweetness and
is more flocculant than the WLP400. Use to produce Belgian Wit,
spiced ales, wheat ales, and specialty beers. It also has the following
qualities:
Attenuation: 70-75%
Flocculation: Low to medium
Optimum Fermentation Temperature: 18-22 degrees Celsius(65-68 degrees
Fahrenheit)
Alcohol Tolerance: Medium
WLP017
Whitbread Ale Yeast:
Traditional mixed culture yeast.
British style character, slightly fruity with some sulfur production. This
yeast can be used for many different yeast styles. The most traditional would
be English styles including milds, bitters, porters and English stouts. North
American styles would also benefit from fermentation from the WLP017 . It
also has the following qualities:
Attenuation: 67-73%
Flocculation: High
Optimum Fermentation Temperature: 18-20 degrees Celsius(66-70 degrees
Fahrenheit)
Alcohol Tolerance: Medium
WLP850 Copenhagen Lager Yeast:
Clean, crisp, North European Lager
yeast. Not as malty as the other European Lager strains. Great for European
style pilsners, European style dark lagers, Vienna, and American style
Lagers. It also has the following qualities:
Attenuation: 72-78%
Flocculation: Medium
Optimum Fermentation Temperature: 10-12 degrees Celsius(50-55 degrees
Fahrenheit)
Alcohol Tolerance: Medium
Fresh Hop Flowers:
The new season hop flower range are
now in stock. These are all freshly grown hop flowers from New Zealand and
include: Belgian Saaz, Willamette, Cascade, Hallertau and Fuggles. The Belgian
Saaz is 7.7%aau, has strong citrus and spicy overtones and would be well suited
to bittering and aroma in European ales and Pilsners. The reason it is called
"Belgian" Saaz, is because it is specifically grown in New Zealand
for a Belgian brewery. The Willamette is 6.1%aau, well balanced and best suited
in English style ales and American pale ales. It is very similar to Fuggles,
but with some spice, so would work as a great substitute. The Cascade is
8.2%aau, with definitive citrus, spice and floral overtones. Would be best
suited in all American style ales as both a bittering and aroma hop. The
Hallertau is 7.8%aau, with medium hop aroma qualities so would work great in
any style lager. And the Fuggles are 5.8%aau and have strong floral aroma
qualities and would be best suited in English ales as both a bittering and an
